They use natural spring water (with a low mineral content) and then carbonate it with a high level of carbonation with lots of very fine bubbles (a higher than usual level of carbonation), they then add just the right amount of bicarbonate of soda, which is used to add a minerality that enhances naturally occuring flavours in the premium spirits it's paired with. A blend of three gingers (from Nigeria, Cochin and the Ivory Coast) is used to create this award-winning Ginger Beer. It's not overly sweetened, so the ginger really comes through leaving a warmth at the back of the throat. Take 60ml of rum (we like this with Bacardi Carta Negra, but any dark rum will do), and add 100ml of ginger beer in a large glass filled with ice.
