Two Stacks Irish Whiskey - Dram in a Can In creating Two Stacks, there was a desire to blend not just whiskey, but also the very best of contemporary Irish flavour and the real heritage of distilling. Historically in Ireland, merchants and grocers would blend and age their own whiskey blends. They would select from distilleries and then chose their own casks in which to age. Over the last 150 years this heritage has slowly been on the decline. Two Stacks wanted to change this. Relying on traditional techniques, they chose whiskies, blend and cask. Then through taste and nose they decide when the Whiskey has reached its maturity and then empty and hand label each bottle. For their Dram in a Can Two Stacks wanted to create a truly distinctive Irish Whiskey, but one for the contemporary palate. To do this they created a blend of grain whiskey's aged in virgin oak and bourbon oak casks. A Pot still whiskey which has been aged in Oloroso Sherry Casks. And finishes with a bourbon cask matured double-distilled malt, and a peated malt aged in bourbon casks. On the nose there is a sweetness, joined by warm butter and a hint of peach tea. It is delicately sweet and spicy whiskey on the palate, with blackberry notes, butterscotch and toasted oak. The finish is long, with a playful warm honey note. Belsazar White Vermouth With a desire to bring a contemporary twist to Vermouth, Belsazar have taken the creativity and vitality of Berlin and merged it with the tastes, and know-how from the Black Forest area of Germany. They use Grapes and wines from carefully selected wineries to build the base of their Vermouth. To this they add wormwood (and essential component of vermouth), but also other native herbs to ensure a natural character. Finally, their finishing touch is the addition of a 'dash' of fruit brandy from the Schladerer distillery (which has been producing fruit brandies since 1844). After combining the various components, the resulting vermouth is aged for up to three months in neutral stone casks. This allows the development of its complex flavours and aromas (the stone casks ensure no additional flavours, which would occur if aged in wood). Whilst there are a lot of Vermouth's available, Belsazar make theirs that little bit different. Their base wines used to create their white vermouth are a Gewurtztraminer Cuvee and a sweet wine cuvee. It has a mild, enticingly sweet aroma and just a touch of vanilla. The palate has clear notes of dreied peaches and oranges, which are accentuated by the herbal spiciness of a vermouth. (The 'secret' in their white vermouth is a dash of apple brandy from Schladerer!). Galliano L'Autentico Liqueur First created in 1896 by Arturo Vaccari - it was named after Giuseppe Galliano a famous Italian officer in the Royal Italian Army. Arturo wanted to capture the spirit of Italy, and worked to create a blend of both Mediterranean and exotic botanicals. Whilst the final recipe is a closely guarded secret (and contains over 30 herbs and spices), it is known to include juniper berries, caraway seed, cloves, cardamon, sandalwood, star anise, cinnamon, sage, thyme, mint, lavender and Madagascan vanilla. The botanicals are used to create a number of different macerations and distillations - these create nine different components. These are then blended, to create the final Galliano Authentico The resulting liqueur is sweet with both vanilla and anise flavours. However, it differs from other anise liqueurs (such as Ouzo or Sambuca in that the vanilla is the top note, and linger to the end of the drink. In taste the anise and peppermint are initially prominent on the palate, which develops into an explosion of fresh herbs. This is followed by a warmth from cinnamon, ginger and nutmeg before a refreshing citrus taste comes through. The Vanilla builds in the drinking, coming through towards the mid-palate and remains to the end along with a touch of spice and refreshing peppermint. Perfect Serve Galliano is a sweet, smooth drink and is commonly enoyed as its own as a digestif after a meal. However it also works well in the mix. It started with George Ballantine in a small grocery store in Edinburgh. Here he would supply a range of whiskies to his customers. his developed into a larger establishment in Edinburgh, where along with his son George Junior they began to create their own blends. In 1920, the recipe for Ballantine's Finest was created, and it has stayed true to the original ever since. The result is a whisky which has become Europe's No. 1 Scotch Whisky, and was voted the World's Best Blended Scotch in 2020. Fun Fact: During prohibition, the bottles were designed to be square so that American Salesmen could conceal them in their briefcases without them rolling around should any inspectors be around!
