Glenfiddich Single Malt 12Y Scotch Whisky Having been founded in 1886 by William Grant, the first whisky ran from their stills on Christmas Day in 1887. The name actually name comes from the location of the distillery, situated in the glen of the river Fiddich. In scots gaelic Glenfiddich means 'valley of the deer', hence the stag found on the bottles. This whisky has been produced since 2008 and is awarded the world over. It's also the most awarded at the IWSC and claims the distinction of being the world's best-selling single-malt whisky. It's known for both its freshness and distinctive fruitiness, both a result of its production methods. The freshness comes from the highland spring water (used since 1887), and the fruitiness form the high cut point which was insisted on by William Grant himself.  The maturation occurs in both american oak, and european oak sherry casks for at least 12 years. Mellowed in oak marrying tuns to ensure a sweet, yet subtle oak flavour.  On the nose the renowned fresh and fruity aroma comes through with a hint of pear. The taste has fruity notes with a characteristic sweetness. These develop into a creamy butterscotch, delicious malt notes and subtle oak flavours. This gem of a whisky is distilled, matured, and bottled on the Isle of Harris, embodying the spirit and character of this unique island community. Indeed, it is even named after the Gaelic word for an inhabitant of Harris, 'The Hearach', This makes the whisky a tribute to the people and pristine nature of the Hebrides. Crafted by the Sea Every drop of The Hearach speaks of its origin – from the soft, peaty waters used in its making to the maritime climate that influences its aging process. Their whisky is a 'Harris Whisky', and as the distillery states “… we do not emulate other drams or regions”, remaining proud of who they are. Whilst each batch is made using the same recipe, they are blended differently (using different barrels, and length of aging), which gives each batch its own individual personality. This batch, (number 10) consists of 12,058 bottles in total. This batch is made using whisky matured in 4 different barrels (Heaven Hill - 21%, Buffalo Trace - 64%, Oloroso - 11% and Fino - 4%). The maturation took a minimum of 4 years, and the marrying 17 weeks and 6 days. A Legacy of Island Craftsmanship The Isle of Harris Distillery, also known as 'The Social Distillery', is at the heart of the local community, reflecting a deep commitment to the Harris way of life. Two Stacks The Blender's Cut Irish Whiskey In creating Two Stacks, there was a desire to blend not just whiskey, but also the very best of contemporary Irish flavour and the real heritage of distilling. Historically in Ireland, merchants and grocers would blend and age their own whiskey blends. They would select from distilleries and then chose their own casks in which to age. Over the last 150 years this heritage has slowly been on the decline. Two Stacks wanted to change this. Relying on traditional techniques, they chose whiskies, blend and cask. Then through taste and nose they decide when the Whiskey has reached its maturity and then empty and hand label each bottle. Their Blender's Cut uses the same recipe as their First Cut Irish Whiskey, however they bottle this one at cask strength – a weighty 65% ABV! The recipe itself is a blend of grain whiskey's aged in virgin oak and bourbon oak casks. A Pot still whiskey which has been aged in Oloroso Sherry Casks. And finishes with a bourbon cask matured double-distilled malt, and a peated malt aged in bourbon casks. This results in a full-bodied Irish whiskey, which is packed full of flavour. On the nose there is a rich sweetness from molasses, which is cinnamon enhanced nectarine and a little oak. The palate opens with dried fruits and notes of raisins and sultanas. Ginger and almonds also come through and are joined by caramel sweetness and a touch of black pepper. It finishes with a honey note, balanced with pepper and nutmeg spice. Coming from the Aztec Nahuatl language, the name Zacapa means “on the river of grass. Proudly made in Guatemala, Zacapa Heavenly Cask La Pasión Rum is a blend of rums aged between 6-23 years. They age the rum using casks that previously held robust American whiskies and fine wines, giving this delicious rum a complex and balanced sip. The Process Zacapa Rum is made using the first press of virgin sugar cane, instead of molasses (which is more common). By using sugar cane, it makes the rum sweeter and smoother. Don Julio Reposado Don Julio González didn't have much, but what he did have was passion, and a dream. It all started back in Mexico in 1942 when he saw a unique opportunity in the production of tequila. After sharing his vision and securing a loan with a powerful local businessman, Don Julio opened his first tequila distillery in La Primavera, in the Jaliscan Highlands. It was his passion that inspired the world's first luxuary tequila.  Each day for 40 years, Don Julio would walk along the agave fields, cutting the grass around each plant (which were more like his children than a crop) to protect them. He'd harvest each plant individually, choosing those with the most optimum maturity and health and would expertly balance the bitter flavour of the piña (the heart) and the sweet leaves of the agave. The climate in the Jaliscan Highland's is the perfect microclimate for the blue agave, with warm days, cool nights and rich clay soil. The high altitude made farming and harvesting a challenge. It was physically demanding, but Don Julio endured the extreme conditions to create a luxuary tequila with exceptional substance and indisputable spirit. Don Julio Reposado Tequila is a soft and elegant aged tequila. The base is made using Don Julio Blanco, a tequila in it's truest form, unaged, double distilled and made with the finest blue agave using a time honoured distillation process. It is rested in American white oak barrels for 8 months, resulting in a tequila giving a golden amber colour and a rich and smooth finish.
