The Hearach Isle of Harris Single Malt Whisky: A Hebridean Jewel Introduction Discover the essence of the Hebrides with The Hearach Isle of Harris Single Malt Whisky. This gem of a whisky is distilled, matured, and bottled on the Isle of Harris, embodying the spirit and character of this unique island community. Indeed, it is even named after the Gaelic word for an inhabitant of Harris, 'The Hearach', This makes the whisky a tribute to the people and pristine nature of the Hebrides. Crafted by the Sea Every drop of The Hearach speaks of its origin – from the soft, peaty waters used in its making to the maritime climate that influences its aging process. Their whisky is a 'Harris Whisky', and as the distillery states “… we do not emulate other drams or regions”, remaining proud of who they are. Whilst each batch is made using the same recipe, they are blended differently (using different barrels, and length of aging), which gives each batch its own individual personality. This batch, (number 10) consists of 12,058 bottles in total. This batch is made using whisky matured in 4 different barrels (Heaven Hill - 21%, Buffalo Trace - 64%, Oloroso - 11% and Fino - 4%). The maturation took a minimum of 4 years, and the marrying 17 weeks and 6 days. A Legacy of Island Craftsmanship The Isle of Harris Distillery, also known as 'The Social Distillery', is at the heart of the local community, reflecting a deep commitment to the Harris way of life. The Hearach is a testament to their dedication to creating a whisky that is not only of exceptional quality but also tells the story of its origin. Even the box itself exudes craftmanship. It’s embossed all over, and includes a gneis-stone pattern on the front - which is  inspired by the stones near their water source. On the back are images of people from the Isle, which are randomly assigned to bottles. The inside of the panels have a poem in Scottish Gaelic named 'Eilean Na Hearadh' (Isle of Harris), and a small book is also included with the story of the whiskey. A bottle coaster is also included in the box, which is created from excess materials that arise during the production process.  A Whisky of Distinct Character The Hearach is notable for its complexity and balance, offering whisky aficionados a taste experience that is both challenging and rewarding. Two Stacks The Blender's Cut Cherry Brandy Cask Irish Whiskey In creating Two Stacks, there was a desire to blend not just whiskey, but also the very best of contemporary Irish flavour and the real heritage of distilling. Historically in Ireland, merchants and grocers would blend and age their own whiskey blends. They would select from distilleries and then chose their own casks in which to age. Over the last 150 years this heritage has slowly been on the decline. Two Stacks wanted to change this. Relying on traditional techniques, they chose whiskies, blend and cask. Then through taste and nose they decide when the Whiskey has reached its maturity and then empty and hand label each bottle. This Cherry Brandy cask edition has been especially created for The Netherlands, and is a limited bottling. So grab yourself a bottle whilst you can, as these won't last long! A unique blend of grain, malt and pot cask whiskies - these have been selected to ensure the perfect blend. These consist of: 40% Dark Grain, which has been aged in Virgin Oak Casks 8% Pot Still, which has been aged in Oloroso Sherry Butts 40% Light Grain, 10% Double Malt and 2% Peated Malt which have all been individually aged in Bourbon Casks After blending, these have then been finished in a French Oak Cask, which had held Cherry Brandy. The result is a whiskey which is definitely 'Two Stacks', but which has delicious notes of ripe plums, as well as hints of cherry cola. Unique and definitely different. Tënu Gin - Le Bon Tikka Barrel Aged Gin Founded in 2014, Tenu Spirits was created by Chef Antto Melasniemi and Artist Klaus Haapaniemi. They had a shared desire to explore, be excited and ensure quality drinks - and so they decided to create their own drinks brand. The original Tënu Gin was created for a pop-up restaurant in London. After proving hugely succesful, they decided to launch it into the wider market. Like a lot of great things, the birth of Le Bon Tikka gin started by accident. During the creation of a test batches of Tënu Gin, Bilberries were substituted for the usual lingonberries. Initially this was too heavy and not found to be acceptable on the palate. However, it did bear some promise - so it was decided to allow it to age in new oak barrels for a period of 6 months. They tried a number of different barrels, and the results varied. Some too vanilla, some far too woody. However, upon blended they found a perfect mix - and Le Bon Tikka was born! Only 1800 bottles of this have been created - so a definite limited edition! Fun fact: Tikka means woodpecker in Finnish - hence the name! It can also be found on the label along with the bilberries. Whilst they keep the full list of botanicals a secret, it is know to include juniper berries, bilberries (only wild, handpicked Finnish ones), wild rose petals (sourced from the Finnish archipelago), orris root, coriander seeds and lemon peel. With a stronger abv this is a gin which is truly packed full of flavour. There is a lot of woody juniper in this, which is joined by oaky spice and hints of sweet stem ginger. A sweet caramel also comes through which evolves in the mouth to floral lavender, warm vanilla and interestingly a clean citrus finish. More from Tënu Spirits Perfect Serve According to the creators, Le Bon Tikka can be enjoyed neat or with ice.However, if you're not so keen on such strong spirits enjoyed neat it also makes an absolutely delicious gin & tonic. Try this with Thomas Henry Tonic Water. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150ml of the tonic and stir gently. Garnish with a slice of lemon.

Nikka Coffey Malt Whisky The history behind Nikka Coffey starts in the 1960's, and comes from the expertise of the Japanese Nikka Whisky company. They have decades of experience blending whiskies, and creating white spirits.  Whilst 'Nikka' is the name of the company, Coffey refers to the type of still used to create the base distillate. This is a traditional continuous still, which produces the signature grain whiskies of Nikka. These were imported from Scotland to Japan in 1963.  With their Malt Whisky, Nikka have gone somewhat against convention. Coffey stills are used by most distilleries only in creating grain whisky. But at theur Miyagikyo distillery they use their two Coffey stills to create this Malt whisky as well. Introduced in 2014, this is a whisky which is rich and full of flavour; definitely a welcome addition to their range of whiskies.  This is a light amber colour in the glass, with a nose full of butterscotch, vanilla and sweet malt. Hints of caramel and winter spiced fruit also come through. In the mouth the spiced fruits, vanilla and butterscotch also come through - as on the nose. These are joined by a maltiness, and nuts. It finishes with a medium length, not overly lingering in the mouth. The butterscotch, malt and fruit linger to the end. More from Nikka Perfect Serve This can be enjoyed neat on its own at room temperature, or over ice. We liked this best with a large single ice-cube as it released additional flavours.

This gives the whisky a mature and rounded expression, with a strength on the palate with a depth of taste, as well as interesting notes from the cask ageing.  The golden amber colour of the whisky releases a rich aroma. Dried fruits and malt come through, with maritime notes of brine and salt crystals. Just a hint of tobacco comes forward, and if water is added a smokiness is released.  On the palate this is exceptional smooth and creamy, with a richness full of flavour. It starts sweet, before releasing salt, smoke and interestingly fruits in the mid palate. Pepper and spice develop on the tongue. When water is added, it's sweetness is enhanced, with ripe figs and spice coming forward.  The finish is long and warm. A late hit of pepper comes through and leaves a smoky fruitiness as an aftertaste. AGED ABOVE THE CLOUDS: ZACAPA SISTEMA SOLERA 23 RUM Introduction Zacapa rum is named after the city of Zacapa in Guatemala, and was created to commemorate the 100th anniversary celebration of its foundation. Coming from the Aztec Nahuatl language, the name Zacapa means “on the river of grass. Proudly made in Guatemala, Zacapa 23 Rum is a blend of rums aged between 6-23 years. They age the rum using casks that previously held robust American whiskies and fine wines, giving this delicious rum a complex and balanced sip. The Process Zacapa Rum is made using the first press of virgin sugar cane, instead of molasses (which is more common). By using sugar cane, it makes the rum sweeter and smoother. The yeast used during the fermentation process is derived from pineapples, which brings out incredible aromas and flavours, and through the distillation process the aroma and flavour charater and profiles are defind for each of the Zacapa Rums. The Rum Journey Master Blender, Lorena Vásquez carefully selects a range of cask types and styles for each rum to capture specific flavours and textures, and that will give the perfect colour. Each rum uses a selection of base casks and a unique cask. Zacapa No. 23 base casks are American oak and charred American oak barrels that previously aged American whiskey and casks that previously aged Oloroso Sherry. The unique cask for this rum previously aged Pedro Ximénez wines.  Aged Above The Clouds Zacapa Rum is aged 2,300 metres above sea level, allowing the rum to develop a deeper aroma and rich layeres of flavour. Their master blender, Lorena Vásquez explains that “Zacapa is aged at high altitude where the temperature is lower. The lower temperature also directly influences the oxygen levels which are lower as well, and this lower oxygen level aids in a slower aging process. The slower aging, allows for more time for the aromas and flavours to combine.” Tasting Notes Aroma: Sweet aroma of vanilla, cacao and butterscotch with notes of caramelized roasted brazil nuts and toasted hazelnut. It has fruity notes of banana and dried pineapple and a touch of toffee. Taste: Complex, generous and full bodied, the taste starts with a depth of dried fruit and apricot, building to savoury oak, nutmeg, leather and tobacco with notes of coffee and vanilla, balanced with a spicy touch of cinnamon and ginger. Finish: It has an intricate finish with honeyed butterscotch, spiced oak, dried fruit and a hint of smoke. Solera is a way to age rum to keep consistancy batch after batch, and is adopted from the Spanish way to age sherry. The process involes having multiple barrels to capture specific flavours and texture. When the oldest barrel of rum is finished, it is replenished with the next oldest, and so on. The newest empty barrel is replenished with a new batch of rum. Can this rum be enjoyed neat? Yes, it can be enjoyed neat, with or without ice. Is Zacapa No. 23 suitable for classic rum cocktails? Absolutely, it is perfect for a Daiquari, and also for variations of classic whisky or gin cocktails, like a Manhattan, Old Fashioned or a Negroni. How should I store Zacapa No. 23 Rum? Rum should be stored in a tightly sealed bottle in a cool, dry place, away from heat sources and direct sunlight. Stored this way, Rum will keep well for years, but the taste and quality of rum in an opened bottle will slowly change as it reacts with oxygen in the air.
