Their tasty drinks give a second life to the leftover coffee grounds and orange peels from the hospitality industry that would usually end up in the bin. ‘ ‘We want to show that sustainability can also be fun and that circularity can lead to fantastic products’’ – They have definitely achieved that. It’s not just waste orange peels that Dik&Schil give new life to. This delicious and limited edition liqueur is made using waste grapefruit peels and rhubarb remains, both of which are leftover during the making of the Paloma cocktail. Dik&Schil Palomacello is a tantalising taste experience with a mix of sweet and sour from the rhubarb, and bitterness from the grapefruit peel. The fruity aroma invites you to taste. On the palate, you will first be greeted by the sweetness of rhubarb, followed by zingy grapefruit – a flavour that builds in your mouth as you continue to enjoy your drink. For a refreshing drink, mix 50ml Palomacello with 150ml tonic water (we like to mix with Lobsters Tonic) and add a grapefruit slice to garnish. Galliano L'Autentico Liqueur First created in 1896 by Arturo Vaccari - it was named after Giuseppe Galliano a famous Italian officer in the Royal Italian Army. Arturo wanted to capture the spirit of Italy, and worked to create a blend of both Mediterranean and exotic botanicals. Whilst the final recipe is a closely guarded secret (and contains over 30 herbs and spices), it is known to include juniper berries, caraway seed, cloves, cardamon, sandalwood, star anise, cinnamon, sage, thyme, mint, lavender and Madagascan vanilla. The botanicals are used to create a number of different macerations and distillations - these create nine different components. These are then blended, to create the final Galliano Authentico The resulting liqueur is sweet with both vanilla and anise flavours. However, it differs from other anise liqueurs (such as Ouzo or Sambuca in that the vanilla is the top note, and linger to the end of the drink. In taste the anise and peppermint are initially prominent on the palate, which develops into an explosion of fresh herbs. This is followed by a warmth from cinnamon, ginger and nutmeg before a refreshing citrus taste comes through. The Vanilla builds in the drinking, coming through towards the mid-palate and remains to the end along with a touch of spice and refreshing peppermint. Perfect Serve Galliano is a sweet, smooth drink and is commonly enoyed as its own as a digestif after a meal. However it also works well in the mix. Try a classic Harvey Wallbanger cocktail, or simply mix with some fresh orange juice for a longer, less alcoholic drink

Nikka Whisky From The Barrel 50cl The history behind Nikka Coffey gin starts in the 1960's, and comes from the expertise of the Japanese Nikka Whisky company. They have decades of experience blending whiskies, and creating white spirits.  In 1985 they created their 'From the Barrel' whisky. With this release Nikka wanted to create a barrel experience, with a full rich flavour - an experience that is normally only experience by blenders.  To create this blend they utilise more than 100 different batches of single malt and grain whiskies which are produced in the Yoichi and Miyagikyo distilleries. After blending they allow it to age for a number of months in a variety of different casks (including those used for bourbon and sherry).  Nikka believe that this marriage process, of the different whiskies and cask aging ensures a distinctly mellow whisky. The award it's won would lead us to believe this is indeed the case! The final product is then bottled in the distinct square bottle - which represents "a small block of whisky". This whisky truly does have a huge depth of flavour to it. This starts by enticing the nose with a floral aroma intertwined with fruit, a touch of spice and a warm oak quality. In the mouth this is full-bodied with notes of winter spices, toffee and a little caramel. Vanilla and fruit blend perfectly on the tongue and linger through to the end. It finishes long, leaving a warmth of fruit and a touch of spice. More from Nikka Perfect Serve This can be enjoyed neat on its own at room temperature, or over ice. We liked this best with a large single ice-cube.

Tënu Gin - Le Bon Tikka Barrel Aged Gin Founded in 2014, Tenu Spirits was created by Chef Antto Melasniemi and Artist Klaus Haapaniemi. They had a shared desire to explore, be excited and ensure quality drinks - and so they decided to create their own drinks brand. The original Tënu Gin was created for a pop-up restaurant in London. After proving hugely succesful, they decided to launch it into the wider market. Like a lot of great things, the birth of Le Bon Tikka gin started by accident. During the creation of a test batches of Tënu Gin, Bilberries were substituted for the usual lingonberries. Initially this was too heavy and not found to be acceptable on the palate. However, it did bear some promise - so it was decided to allow it to age in new oak barrels for a period of 6 months. They tried a number of different barrels, and the results varied. Some too vanilla, some far too woody. However, upon blended they found a perfect mix - and Le Bon Tikka was born! Only 1800 bottles of this have been created - so a definite limited edition! Fun fact: Tikka means woodpecker in Finnish - hence the name! It can also be found on the label along with the bilberries. Whilst they keep the full list of botanicals a secret, it is know to include juniper berries, bilberries (only wild, handpicked Finnish ones), wild rose petals (sourced from the Finnish archipelago), orris root, coriander seeds and lemon peel. With a stronger abv this is a gin which is truly packed full of flavour. There is a lot of woody juniper in this, which is joined by oaky spice and hints of sweet stem ginger. A sweet caramel also comes through which evolves in the mouth to floral lavender, warm vanilla and interestingly a clean citrus finish. More from Tënu Spirits Perfect Serve According to the creators, Le Bon Tikka can be enjoyed neat or with ice.However, if you're not so keen on such strong spirits enjoyed neat it also makes an absolutely delicious gin & tonic. Try this with Thomas Henry Tonic Water. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150ml of the tonic and stir gently. Garnish with a slice of lemon.

Another name for a speakeasy, A blind tiger was a hidden bar which served alcohol during the period of prohibition. Blind Tiger's Imperial Secrets gin is made in small batches in a "concealed" distillery in the west of Belgium, they macerate and distill the botanicals together before adding seperately distilled teas afterwards. And it is these teas which make this gin something unique and different. Three different Imperial black teas, Indian harmutty Assam tea, Imperial pu-erh himalaya cashmere from the Himalayas and Chinese Yunan matured tea are meticulously distilled to extract their flavours, before being blended and added to the gin. This is a smooth and lucious gin which also takes notes from a botanical blend which includes juniper berries, coriander seeds, grains of paradise, angelica and iris root, lemon peel, bitter almonds and lemon grass. Blind Tiger Imperial Secrets Gin Whilst it gives a striking look to the bottle, there is a reason behind the name of Blind Tiger. Another name for a speakeasy, A blind tiger was a hidden bar which served alcohol during the period of prohibition. The door of the place would have the picture of a blind tiger or a blind pig, so those in the know would know where to go! Blind Tiger's Imperial Secrets gin is made in small batches in a "concealed" distillery in the west of Belgium, they macerate and distill the botanicals together before adding seperately distilled teas afterwards. And it is these teas which make this gin something unique and different. Three different Imperial black teas, Indian harmutty Assam tea, Imperial pu-erh himalaya cashmere from the Himalayas and Chinese Yunan matured tea are meticulously distilled to extract their flavours, before being blended and added to the gin. This is a smooth and lucious gin which also takes notes from a botanical blend which includes juniper berries, coriander seeds, grains of paradise, angelica and iris root, lemon peel, bitter almonds and lemon grass. Hernö Sipping Gin 2021 1.5 Brännland Ice Cider Cask 50cl Hernö is the first dedicated gin distillery in Sweden, and is located in Dala on the high coast of Sweden. They only produce organic, artisanal gins, which are inspired by the natural beauty of Sweden. The Hernö Sipping gin series from was started in 2016 as a way to help strengthen the hospitality industry in the High Coast of Sweden. Whilst a beautiful area - it offers unique challenges to business located there. From the winter weather extremes to the long distances, combined with a sparsley populated region. In an attempt to attract visitors to the High Coast Whisky Festival and Hernö Gin Open House, Jon Hillgren (Master Distiller) struck on the idea of limited edition bottlings. These would be primarily to the attendees of the events. Any remaining would then be sold through the Swedish liquor stores (Systembolaget). An even smaller number were also made available for export. Now in their fifth year, and fifth release, edition 1.5 has a limited release of 1450 bottles (1,000 of which were exclusive to the Swedish market). These releases have fast proved popular, and become collectors editions. So grab a bottle whilst you can! With this edition they took their classic (and much awarded) Hernö Gin and matured it for 60 days in casks which previously held Brännland Ice Cider. Barrique. Prior to this, these casks came from the French Wine region of Sauternes. It's this cask aging which gives the gin its delightful golden colour. On the nose there is a powerful aroma of oak, which is joined by juniper, floral hebal notes of meadowsweet and a deep undertone of tart green apple peel. The flavours have a strong influence from both juniper and oak. However these are balanced with the meadowsweet, black pepper and a touch of citrus. These all merge perfectly, balancing each other. As the gin moves towards its finish, its dryness comes through with spices, the juniper comes forward again too and is joined by a hint of vanilla. Ableforth's Summer Fruit Cup Since their founding in 2011, Ableforth's have been making drinks that the founders (three friends) would enjoy themselves. They took inspiration from the past, looking at drinks which had robust, fresh - yet unusual flavours. In fact, they just wanted to ensure a "range of really bloody tasty spirits'. For their Summer Fruit Cup they wanted to "bottle summer". By this they meant creating a delicious drink which captures not just the flavours, but the feeling that a warm sunny day brings. To do this they macerate fresh strawberries, cucumber, orange and mint before vacuum distilling to extract the maximum amount of flavour. This distillate is then blended with their award winning Bathtub Gin as well as a mix of sweet Italian Vermouths, and a triple sec liqueur. They then add a blend of herbs and spices to ensure the perfect balance. The result gives a deep and complex nose which is full of spice, fruit and even a hint of cocoa. As the aroma develops the signature botanicals (cucumber, strawberry and orange) all come through. The taste is deliciously intense, but not at all over-powering. All the botanicals are given their time to shine, but it's the strawberry and a hit of refreshing fresh mint which really please the mouth. It finishes long and especially smooth with the mint, orange, cucumber and strawberries all lingering on the palate. More from Ableforth's Perfect Serve This works best when mixed with either a sparkling lemonade or sparkling / soda water. Mix 50ml of the Summer Fruit Cup with 100ml of your chosen mixer over plenty of ice. Garnish with a sprig of fresh mint and a sliced strawberry.

Clover Lucky No. 4 Gin Launched in 2017, and made in Belgium, Clover Lucky N°4 is a more citrus take on the original Clover. It's made with locally grown and sourced ingredients, and they are proud that this is an original and Belgian product. The three leaves of the Clover represent a number of things with this gin. The three sisters who own the company, and their memories of childhood running through clover strewn meadows. Their mother (a botanist), instilled in them a knowledge of herbs, flowers and spices - which sparked a love for all things flora. This knowledge and passion comes through in their products as well. The initial aroma of this gin is perfumed with a delicate herbalness to it. When mixed with tonic, the initial perfume hit is lessened, allowing more of the herbal notes to come through. The taste is delicate too (and makes this a very easy to drink Gin!), with green tea and cardamom perfectly balanced with citrus notes from bergamot (a type of bitter orange crossed with lemon) and clementine.  Being a slightly higher alcohol percentage (44%), it might be thought that this would be a harsher gin than the original Clover, however this is definitely not the case. A light herbal profile comes through at first taste, which develops into the more citrus notes. This doesn't make this a strongly citrus (or sweet) gin, but rather adds a freshness and lightness to the drink. There is the mild hint of green tea throughout the gin, which works well at bringing it together as a whole. The end is delicate again, yet somehow also rich and warming (definitely not harsh though). Interestingly, the juniper notes in this gin are present, but not in any way overpowering, and more as a hint at a background taste. To this end, if may not be one for those who really like the juniper, pine and woody notes of a more classic gin.  This is a really easy gin to drink, especially for those new to the world of gin. The taste is subtle, and can easily be enjoyed without any of the flavours fighting on the tastebuds. Definitely one we would recommend trying as its very unique! Read more about Clover Perfect Serve This is one of the most pleasant, and easy to drink gins we have tried. It's delicate profile means this really is easy to drink neat over ice (maybe a little too easy though... so watch how quickly the bottle goes down!). However, it's definitely worth trying mixed with a neutral tonic such as Three Cents Tonic Water. This really is a delicate gin family as a whole, and any of the flavoured gins could easily overpower what is already a delicious drink! In a good sized glass with plenty of ice, mix 50ml of the gin with 150ml of your chosen tonic. Garnish with a slice of grapefruit (which enhances the citrus profile of the gin), and a sprig of rosemary (which heightens the herbal notes).

44°N Gin Created to capture the "luminous depth of the sea and the windswept aromas of the Mediterranean in every drop", this is an ultra premium French gin. Named after the geographic location of its producer Comte de Grasse (literally Count of Grasse), it is situated just north of Cannes and west of Nice - in the Cote d’Azur, Southern France They utilise as many locally sourced botanicals as possible, Bitter Orange, Cade, Mimosa, Centifolia and Immortelle to ensure they capture the spirit of the area.  The flavour remains true to its mediterranean roots as well, with a floral body from hints of Grasse’s Rose Centifolia and bright jasmine. There is a touch of jam like sweetness through the bitter orange which is expertly countered with a herbaceous punch of Angelica and Samphire. A little warmth from a touch of pepper greets you throughour the drink.This doesn't overpower though, rather enhacing the other botanicals bringing them to life. The finish benefits deliciously from Orris and honey which ensure a sweet yet musky long-lasting effect on the tongue. These blend perfectly with the floral and citrus notes, all mingling perfectly together. Perfect Serve With a multitude of flavours within the drink, this works perfectly with a neutral tonic like Fever-Tree Indian Tonic. However, this also works particularly well with Fever-Tree Mediterranean Tonic, which adds a little more sweetness to the gin and tonic. With either tonic, we recommend 50ml of gin to 100 - 150ml of the tonic. With this gin, just plenty of ice and a large glass is needed. No garnish necessary as the gin really speaks for itself!

Tënu Gin - Forest Blend Founded in 2014, Tenu Spirits was created by Chef Antto Melasniemi and Artist Klaus Haapaniemi. They had a shared desire to explore, be excited and ensure quality drinks - and so they decided to create their own drinks brand. The original Tënu Gin was created for a pop-up restaurant in London. After proving hugely succesful, they decided to launch it into the wider market. After much searching, they settled on producing their gin at the Valamo Monastery Distillery. In this location in the eastern of Finland, they have an abundance of crystal clear water, and also lingonberries. These berries are the distinctive ingredient found in the gin, and grow wild in the vicinity of the distillery where they are hand-picked for use. After distillation in an Holstein copper pot still , this gin is allowed to rest for three weeks before being bottled. This ensures a well balanced gin. Whilst they keep the full list of botanicals a secret, it is know to include juniper berries, lingonberries, wild rose petals (sourced from the Finnish archipelago), orris root, coriander seeds and grapefruit peel. This is a gin which truly resonates with the wilderness of Finland. As could be expected from a Forest Blend from Finland, the piney juniper is strong in this gin. Ginger and black pepper offer enticing warming spice flavours, which then melt into an intruiging floral bouquet from lavender and violet. It finishes with the juniper coming through again, joined by a crisp note of citrus and a lingering earthiness. More from Tënu Spirits Perfect Serve In Finland this is enjoyed straight from the freezer in 20ml shots - either on its own, or with a drop of bitters. For a gin & tonic Tënu recommend enjoying with a less sweeter tonic. We tried this with Fentimans Connoiseurs Tonic and found it worked well. Use a large glass filled with ice and add 50ml of the gin to 150ml of the tonic. Garnish with a simple twist of grapefruit peel.
