Wildjac Natural Dry Gin Wildjac, gevestigd in het Wyre Forest, ten zuidwesten van Birmingham in het Verenigd Koninkrijk, streeft ernaar een reeks duurzame en milieuvriendelijke premium botanische spirits te produceren. Daartoe maken ze hun drankjes met de hand met alleen 100% natuurlijke ingrediënten die ze (waar mogelijk) lokaal inkopen. Voor hun natuurlijke droge gin heeft Wildjac inspiratie gehaald uit diep in hun huis, het Wyre Forest. Met douglas, koriander, zoethout, vlierbes, kamille, jeneverbes, engelwortel, citroenmelisse, verse sinaasappel, verse citroen en tijm hebben ze een gin gecreëerd die de drinker meeneemt naar het hart van het bos. In de neus is dit pittig, met levendige kruidachtige groene tonen van de jeneverbes en douglas spar. In de mond zijn de klassieke tonen van een jenever, jeneverbes, hier te vinden en worden aangevuld door tijm, douglas-spar en citroenmelisse (allemaal lokaal geoogst). Deze sterke en grote botanische smaken worden perfect aangevuld en afgerond door kamille en engelwortel. De reis gaat door tot het einde, waar verfrissende sinaasappel- en citroentonen het gehemelte begroeten en een prachtig schone afdronk geven. Wildjac Natural Dry Gin Based in the Wyre Forest, to the South West of Birmingham in the UK, Wildjac strive to produce a range of sustainable and eco-friendly premium botanical spirits. To this end, they hand-craft their drinks using only 100% natural ingredients which (where possible) they source locally. For their Natural Dry Gin, Wildjac have taken inspiration from deep within their home, the Wyre Forest. Using Douglas Fir, Coriander, Liquorice, Elderberry, Chamomile, Juniper, Angelica, Lemon Balm, Fresh Orange, Fresh Lemon and Thyme they have created a gin which takes the drinker right to the heart of the forest with them. On the nose this is zesty, with lively herbaceous green notes from the juniper and douglas fir. On the palate the classic notes of a gin, juniper, can be found here and are complimented by thyme, douglas fir and lemon balm (all of which are locally foraged). These strong and big botanical flavours are perfectly complimented and rounded out by chamomile and angelica. The journey continues to the end, where refreshing orange and lemon notes greet the palate giving a beautifully clean finish. Gin 1689 This gin is based on an original recipe (from 1689.... hence the name!), by the Dutch William of Orange after he was proclaimed King of England, Ireland and Scotland in 1689. Through painstaking research in the Royal British Library's rare book section, this recipe came to light after being found in the rare books archive. The recipe detailed the original ingredients, but unfortunately the quantities were concealed by code, which to date has not been broken! Not to be deterred, the rights of the recipe were acquired, and a perfect partner found to recreate the delicate flavours of the original gin: Herman Jansen. One of the Netherlands finest distillers, the distillery was founded in 1777 and based in the Dutch Gin & Genever capital Schiedam. Through trial and error, today's recipe was perfected and finalised. The original ingredients from 350 years ago are used, with Gin 1689 beautifully combining juniper with dried quince and pippin (an ancient apple variety), lemon and orange peel, nutmeg, aniseed and clove. It's quite fruity on the nose, but not surprising when you see the recipe. Juniper is present, but takes more of a background role, with a sweet spiciness, and a touch of citrus being much more pronounced. As with all gins, the taste differs when drinking straight (neat, over ice), or with a tonic. When tried neat, the juniper comes forward in the taste with a pleasant tanginess (coming from the quince and apple). Citrus notes are present, but more round the gin off than being too prevalent. When tried with tonic, this really comes alive as the carbonation (bubbles), lift the botanicals allowing more to shine. The citrus is more noticeable when drunk this way. Coming in a brilliant blue bottle, with regal gold lettering befitting its Royal background, the overall result is definitely fit for a King! The Mayor of Exploration: Rynbende Vintage Genever Introduction Rynbende have a history going back more than 200 years. The distillery was established in 1793, by Simon Rybende in the world's Jenever capital, Schiedam. A former sailor, he turned to business, and distilling, and was even appointed the Mayor of Schiedam. A New Generation of Rynbende The Rynbende brand has had highs and lows during it's history and was re-ignited again in 2022, when the original Rynbende recipes were passed down to another generation through inheritance . Now called Rynbende Spirits, the focus is on producing high end spirits, with a selective distribution network (of which Gin Fling is happy to be one). Authentic Rynbended Botanicals Rynbender Vintage Genever was the first spirit to be launched and based on an old recipe found in the inherited recipe book. 'The Mayor of Exploration' is an old genever and is an ode to the glory days of the original distillery, containing authentic botanicals (peppermint leaf, angelica seed, cinnamon, clove, hyssop, angelica root, cardamom and mace) which gave it it's signature taste, setting it apart from the competition. Traditional Distilling Rynbende is distilled according to the Schiedam tradition from 1902, which produces a purer drink. It is made with malt wine that has been aged for 3 years in American oak barrels, and with smoky malt whiskey and vodka aged in European oak barrels for 25 years. The Hearach Isle of Harris Single Malt Whisky: A Hebridean Jewel Introduction Discover the essence of the Hebrides with The Hearach Isle of Harris Single Malt Whisky. This gem of a whisky is distilled, matured, and bottled on the Isle of Harris, embodying the spirit and character of this unique island community. Indeed, it is even named after the Gaelic word for an inhabitant of Harris, 'The Hearach', This makes the whisky a tribute to the people and pristine nature of the Hebrides. Crafted by the Sea Every drop of The Hearach speaks of its origin – from the soft, peaty waters used in its making to the maritime climate that influences its aging process. Their whisky is a 'Harris Whisky', and as the distillery states “… we do not emulate other drams or regions”, remaining proud of who they are. Whilst each batch is made using the same recipe, they are blended differently (using different barrels, and length of aging), which gives each batch its own individual personality. This batch, (number 10) consists of 12,058 bottles in total. This batch is made using whisky matured in 4 different barrels (Heaven Hill - 21%, Buffalo Trace - 64%, Oloroso - 11% and Fino - 4%). The maturation took a minimum of 4 years, and the marrying 17 weeks and 6 days. A Legacy of Island Craftsmanship The Isle of Harris Distillery, also known as 'The Social Distillery', is at the heart of the local community, reflecting a deep commitment to the Harris way of life. The Hearach is a testament to their dedication to creating a whisky that is not only of exceptional quality but also tells the story of its origin. Even the box itself exudes craftmanship. It’s embossed all over, and includes a gneis-stone pattern on the front - which is  inspired by the stones near their water source. On the back are images of people from the Isle, which are randomly assigned to bottles. The inside of the panels have a poem in Scottish Gaelic named 'Eilean Na Hearadh' (Isle of Harris), and a small book is also included with the story of the whiskey.
