With more than six centuries of experience, there is a long history of distilling spirits in Scotland and the country has everything needed for crafting rum – well, everything except for the sunshine. Scotland is not known for its tropical climate, so sun-baked molasses is shipped from the Caribbean to the state-of-the-art Brewdog distillery and transformed by hand into honeyed liquid, ready for distilling with plenty of Scottish spirit. Brewdog 500 Cuts Cherry and Dark Chocolate Rum is a sweet and smooth rum, infused with both wild and morello cherry and rich dark chocolate. The combination of both tart and bitter flavours make for a delicious rum. There are notes of caramel and orange peel, with ginger, cloves and cardamom to add a bit of spice. Good to know: Brewdog care about the environment and this distillery is the first carbon negative distillery in Scotland. So basically, they remove twice as much carbon as they emit into the air. Two Stacks Irish Whiskey - Dram in a Can In creating Two Stacks, there was a desire to blend not just whiskey, but also the very best of contemporary Irish flavour and the real heritage of distilling. Historically in Ireland, merchants and grocers would blend and age their own whiskey blends. They would select from distilleries and then chose their own casks in which to age. Over the last 150 years this heritage has slowly been on the decline. Two Stacks wanted to change this. Relying on traditional techniques, they chose whiskies, blend and cask. Then through taste and nose they decide when the Whiskey has reached its maturity and then empty and hand label each bottle. For their Dram in a Can Two Stacks wanted to create a truly distinctive Irish Whiskey, but one for the contemporary palate. To do this they created a blend of grain whiskey's aged in virgin oak and bourbon oak casks. A Pot still whiskey which has been aged in Oloroso Sherry Casks. And finishes with a bourbon cask matured double-distilled malt, and a peated malt aged in bourbon casks. On the nose there is a sweetness, joined by warm butter and a hint of peach tea. It is delicately sweet and spicy whiskey on the palate, with blackberry notes, butterscotch and toasted oak. The finish is long, with a playful warm honey note. They start by creating their own Abstrakt Vodka which is used as the base spirit for their gins. They do this to ensure the quality of the spirit from start to finish. Brewdog Five Hundred Cuts Botanical Rum Taking inspiration from Elizabeth Blackwell (affectionately known as Lizzie at Brewdog), who was an 18th Century artist known for creating a comprehensive herbal text on plants. This included illustrations as well as descriptions. The plant engravings (or "cuts") numbered 500, and were reknowned as being exceptionally accurate. Starting the process, Brewdog take White rum, which is made from sugar cane molasses and is fermented with red wine yeast for seven days. This is is double-pot distilled releasing notes of tropical fruit and burnt sugar. They then re-distil the base rum with the botanicals (orange peel, lavender, schezuan peppercorns and cardamom) gently over four hours. Cinnamon, nutmeg, mace, tonka bean, ginger, and allspice are steeped in the spirit for 14 hours to release their flavours. The two spirits are blended and finished off with a touch of muscovado sugar. Through this dedicated process, Brewdog have created a drink which is full of spice and zest, and definitely a fitting testiment to the pain-staking work of Lizzie! A London dry gin, which definitely packs a juniper 'thump' right from the start. However, this soon blends delightfully into enlightening coriander, and citrus end notes. The Wessex twist to this gin comes from the chervil which makes it quite unique and gives a faintly anissed flavour to the gin. In Anglo-saxon times, chervil was believed to aid the constitution and strengthen the stomach. To which we say, if it's fortifying you - then have a small second! IBHU Indlovu Gin (Mini) 5cl

IBHU Indlovu Gin Whilst on a safari in Kenya, the founders were enjoying a g&t whilst watching a herd of elephants. Their guide was telling how particular elephants are in their browsiing habits, yet actually digest little of what they eat. So.... an idea was born.... would it be possible to make elephant dung gin? This is truly a gin made in Africa, which is designed by elephants! (Don't worry.... the dung is carefully collected, then washed and dried before being distilled!) Indlovu is even the word for elephant in several South African languages. It's these majestic animals which dictate, in their foraging habits, the botanicals utilised in the creation of this gin. This gin has a true provenance to it, similar to wines. The dung is collected in different locations, and at different times of the year. This dictates some of the botanicals found in the gin. On the back of each bottle are two numbers, the first is the co-ordinates of the game reserve where its collected, and the second is the date when it was collected. Whilst the elephants help in the making of the gin, the classical botanicals in the gin are Juniper, Angelica, Orris Root, Coriander and citrus. Those which are chosen by the elephants could include Buccu (Agathosma crenulata), Acacia (Acacia mearnsii), Guarii (Euclea undulata) and Erica (Erica coccinea) (which are the elephants’ favourite foods).
