Founded in 1824 (making it nearly 200 years old) The Macallan distillery is located in Craigellachie, Moray in Scotland. The Macallen is classed as the second or third best-selling single malt scotch (behind Glenfiddich, and perhaps Glenlivet). One of their limited editions, A Night on Earth is an annual release and is a unique expression which is created by carefully balancing exceptional first-fill American ex-bourbon barrels, along with European and American sherry-seasoned oak casks. Its created to celebrate the special time of New Year. A time when people journey to be together, to acknowledge the passing of the old year, and welcome in the new. This edition is created in collaboration with the acclaimed Chinese artist, Nini Sum. It comes with innovative multi-layered packaging that provides an exceptional unboxing experience - perfect as a special gift for a whisky lover, or just as exquisite for the whisky connoisseur to buy for themselves. The artwork on the box ties together the whisky's notes and Nini's cherished New Year memories. Capturing the burst of fireworks, the enticing aromas of toasted oak emanating from rice popcorn vendors on the brightly decorated streets of her town, the milk candy in her pockets and the sweet fragrance of steamed rice pudding beckoning her home. The whisky also has a nuttiness, which is an echo of the sunflower seeds Nini’s family shared as they laughed and talked about their wishes for the new year. The whisky itself has a sunrise golden colour to it, which releases a luscious aroma of toasted oak, steamed rice and oak pudding which is joined by citrus, vanilla and oat biscuits. The palate opens up with a burst of effervescent citrus fruits (lemon and lime) which is joined with flavours likened to a sweet creamy vanilla sponge and toasted coconut.  This leads to a medium finish, which leaves sweet, toasted oak and vanilla on the tastebuds. Tënu Gin - Forest Blend Founded in 2014, Tenu Spirits was created by Chef Antto Melasniemi and Artist Klaus Haapaniemi. They had a shared desire to explore, be excited and ensure quality drinks - and so they decided to create their own drinks brand. The original Tënu Gin was created for a pop-up restaurant in London. After proving hugely succesful, they decided to launch it into the wider market. After much searching, they settled on producing their gin at the Valamo Monastery Distillery. In this location in the eastern of Finland, they have an abundance of crystal clear water, and also lingonberries. These berries are the distinctive ingredient found in the gin, and grow wild in the vicinity of the distillery where they are hand-picked for use. After distillation in an Holstein copper pot still , this gin is allowed to rest for three weeks before being bottled. This ensures a well balanced gin. Whilst they keep the full list of botanicals a secret, it is know to include juniper berries, lingonberries, wild rose petals (sourced from the Finnish archipelago), orris root, coriander seeds and grapefruit peel. This is a gin which truly resonates with the wilderness of Finland. As could be expected from a Forest Blend from Finland, the piney juniper is strong in this gin. Ginger and black pepper offer enticing warming spice flavours, which then melt into an intruiging floral bouquet from lavender and violet. It finishes with the juniper coming through again, joined by a crisp note of citrus and a lingering earthiness. More from Tënu Spirits Perfect Serve In Finland this is enjoyed straight from the freezer in 20ml shots - either on its own, or with a drop of bitters. For a gin & tonic Tënu recommend enjoying with a less sweeter tonic. We tried this with Fentimans Connoiseurs Tonic and found it worked well. Use a large glass filled with ice and add 50ml of the gin to 150ml of the tonic. Garnish with a simple twist of grapefruit peel.

Lighthouse Gin Hawthorne Edition Coming all of the way from New Zealand, you know this gin is going to be something special. Made on the southern tip of the North Island of New Zealand, this gin comes from Martinborough. It is here that the namesame of the gin comes from, a great cast-iron lighthouse , the Cape Palliser Lighthouse which is immortalised on every bottle. (It actually came all the way from the UK in 1896 when New Zealand was still a British colony). Lighthouse's Hawthorne Edition is their Navy-Strength edition, and is bottled at 57% abv. This increased alcohol content holds a great amount of the essential oils and flavourings in the gin, and so the flavours are really increased here.  Just like its brother, the Hawthorne edition uses the same unique blend of botanicals, which master distiller Neil Catherall spent years researching before establishing Lighthouse Gin in 2005. These botanicals include fresh zest from New Zealand Navel oranges and Yen Ben lemons, which really makes this a special gin. (The other botanicals they use are juniper berries, coriander seed, cinnamon, almonds, cassia bark, orris root and liquorice root.) The attention to details continues in the water they use. It travels from high in the Rimutaka Ranges, filtering down to a spring beside the breathtaking Wharekauhau Country Estate in Palliser Bay. The Hawthorne Edition takes the delicious flavours found in their classic gin and turns up the flavour dial on them. Whereas the classic is softer with the botanical notes, this is intense and peppery. However it still retains its citrus forward notes, and a strong earthy note from the piney juniper. The finish remains silky and smooth. More from Lighthouse Perfect Serve We love this in a classic gin & tonic, but its strength and flavour profile also really works when used in a Martini. For a delicious g&t, take a glass filled with ice and add 50ml of gin. Gently pour over 100 - 150ml of Fentimans Connoiseurs tonic (this deserves to be drunk stronger, and savoured slowly). Stir gently and garnish with a wedge of lemon and a few juniper berries.

Midnight London Dry Gin Located in Croatia, just a few kilometres from the sea, Imagine Spirits is nestled between the picturesque cities of Vrsar and Rovinj in Istria. Surrounded by olive trees and vineyards, the distillery has been built with the highest eco-standards, and for their distillation process they utilise solar energy for the majority of their needs. With their Midnight Gin, Imagine Spirits have created a gin which blends together two seperate, and distinct distillations. Each of these has 12 botanicals, one represents the day whilst the other represents the night. They Do not use any artificial colourings or sweeteners at any stage of its production, and where possible use locally sourced and organic botanicals. The Juniper they use is also Croatian, which is considered one of the best in the world and is used in gin production all over the world. The first distillation, the day, is gentle with floral notes. Its creation uses Juniper Berries, Coriander Seeds, Angelica Root, Orris Root, Cubeb Pepper, Grains of Paradise, Monk's Pepper, Bitter Orange Flowers, Grapefruit, Lemon Peel, Lavender Flowers and almonds. The second distillation, the night, is more exotic, with spice notes which evoke the nighttime. They use Juniper Berries, Coriander Seeds, Angelica Root, Orris Root, Olive Leaves, Sage, Pine Nuts, Chamomile, Cacao Beans, Sandalwood, Vanilla and Pink Peppercorn. After the seperate distillations are created, they are blended before being allowed to rest for 24 days before bottling.  The result is an intruiging gin, which is exceptionally well balanced in its flavour profile. On the nose there is an intense and bold hit from the juniper, which is followed by notes of herbs and coriander in particular. On the palate this is smooth, and coats the mouth well - helping impart its flavours. The herbaceous notes found in the aroma come through too with a hint of sweetness. Exceptionally aromatic, the has a long flavour in the mouth, with deep spicy and earthy notes, fresh juniper and lemon and a touch of pine towards the end. More from Imagine Spirits Perfect Serve As a well balanced gin this is exceptionally versatile. It works well in a classic Gin & Tonic, or equally imparts some class into a cocktail. We loved this in a Martini with an olive garnish. For a classic Gin & Tonic take a large glass filled with ice and add 50ml of the gin. Gently pour over 150 - 200ml of your chosen tonic and stir gently. Garnish with a slice of orange and a sprig of rosemary.

Indeed, it is even named after the Gaelic word for an inhabitant of Harris, 'The Hearach', This makes the whisky a tribute to the people and pristine nature of the Hebrides. Crafted by the Sea Every drop of The Hearach speaks of its origin – from the soft, peaty waters used in its making to the maritime climate that influences its aging process. Their whisky is a 'Harris Whisky', and as the distillery states “… we do not emulate other drams or regions”, remaining proud of who they are. Whilst each batch is made using the same recipe, they are blended differently (using different barrels, and length of aging), which gives each batch its own individual personality. This batch, (number 10) consists of 12,058 bottles in total. This batch is made using whisky matured in 4 different barrels (Heaven Hill - 21%, Buffalo Trace - 64%, Oloroso - 11% and Fino - 4%). The maturation took a minimum of 4 years, and the marrying 17 weeks and 6 days. A Legacy of Island Craftsmanship The Isle of Harris Distillery, also known as 'The Social Distillery', is at the heart of the local community, reflecting a deep commitment to the Harris way of life. The Hearach is a testament to their dedication to creating a whisky that is not only of exceptional quality but also tells the story of its origin. Even the box itself exudes craftmanship. It’s embossed all over, and includes a gneis-stone pattern on the front - which is  inspired by the stones near their water source. On the back are images of people from the Isle, which are randomly assigned to bottles. The inside of the panels have a poem in Scottish Gaelic named 'Eilean Na Hearadh' (Isle of Harris), and a small book is also included with the story of the whiskey. They advise: "The elegant flavours of our whisky will be perceived differently by different people as they allow the complex character of our dram to unfold in their glass over time. It comes along with a toasted maltiness. I can also taste homemade apple sauce and smell machair flowers, particularly white clover which springs up on our west coast every summer. Mixed spices appear, and an old-fashioned sweetness from things like candied ginger, vanilla, and honeycomb. Xibal Equinox Gin 70cl

Xibal Equinox Gin Taking inspiration from Mayan mythology - and the magical spiring equinox - this is a gin coming from Guatamala.  Similar to the original Xibal gin, as part of its creation, botanical fundamentals which come from the Central American region were utilised. This was done to as to obtain a fusion between its Guatemalan roots, the pre-Columbian Mayan culture and mythology, and today's drinking trends. The Guatemalan identity in particular is clear from the bottle. These show symbols and decorations relevant to one of the most important places in Mayan mythology: Xibalba (from which the name of the gin also comes). Xibalba is alegendary middle ground where the Mayan gods challenged the terrains.  The gin itself is created in a micro-distillery and is distilled five times in a traditional copper still. In the Equinox edition, they blend characteristic botanicals from the original, as well as products grown during the fertile season, such as grapefruit and guava. The inspiration from the spring equinox (an astronomical phenomenon when the day and night are of equal length, and the sun reaches its highest point) is in mayan mythology a legendary moment. This time is when a new season is welcomed giving fertility to the earth and heralding the arrival of extraordinary moments. Thanks to the clear bottle, the clear gin can be seen within - which has a soft coral colour to it. On the nose the juniper comes through at the fore, but is quickly followed by fruity guava, fresh cardamom, and citrus. On the palate the piney juniper greets you, before waves of fruity guava, and citrus come through. These blend well, and leave the palate refreshed. More from Xibal Perfect Serve This works particularly well in a gin & tonic. The carbonation helps lift the botanicals in the drink. In a copa glass filled with ice, add 50ml of the gin. Gently top up with 150ml of your chosen tonic (we found East Imperial Tonic worked particularly well here), and then stir gently. Garnish with a slice of grapefruit.
