Two Stacks Irish Whiskey - Dram in a Can In creating Two Stacks, there was a desire to blend not just whiskey, but also the very best of contemporary Irish flavour and the real heritage of distilling. Historically in Ireland, merchants and grocers would blend and age their own whiskey blends. They would select from distilleries and then chose their own casks in which to age. Over the last 150 years this heritage has slowly been on the decline. Two Stacks wanted to change this. Relying on traditional techniques, they chose whiskies, blend and cask. Then through taste and nose they decide when the Whiskey has reached its maturity and then empty and hand label each bottle. For their Dram in a Can Two Stacks wanted to create a truly distinctive Irish Whiskey, but one for the contemporary palate. To do this they created a blend of grain whiskey's aged in virgin oak and bourbon oak casks. A Pot still whiskey which has been aged in Oloroso Sherry Casks. And finishes with a bourbon cask matured double-distilled malt, and a peated malt aged in bourbon casks. On the nose there is a sweetness, joined by warm butter and a hint of peach tea. It is delicately sweet and spicy whiskey on the palate, with blackberry notes, butterscotch and toasted oak. The finish is long, with a playful warm honey note. The Macallan distilleerderij werd opgericht in 1824 (en is dus bijna 200 jaar oud) in Craigellachie, Moray in Schotland. De Macallen wordt geclassificeerd als de op één of twee na best verkopende single malt whisky (achter Glenfiddich en misschien Glenlivet). Een van hun gelimiteerde edities, A Night on Earth, wordt jaarlijks uitgebracht en is een unieke expressie die wordt gecreëerd door het zorgvuldig balanceren van uitzonderlijke first-fill Amerikaanse ex-bourbon vaten, samen met Europese en Amerikaanse sherry geroosterde eiken vaten. Het is gecreëerd om de speciale tijd van Nieuwjaar te vieren. Een tijd waarin mensen rondreizen om samen te zijn, het oude jaar te vieren en het nieuwe jaar te verwelkomen. Wessex Rhubarb & Ginger Gin Produced previously as a limited edition, Wessex brought it back to their range due to popular demand.  What makes this special is the way they create it, using a unique two-step process. Using real rhubarb juice, they mix this with ginger and then distil in a copper vacuum still. This ensures all the flavour comes through, giving a pure flavour profile.  It has a delicious fragrance of fresh rhubarb, balanced by a warming ginger aroma. The main botanicals used in this gin are juniper, ginger, rhubarb and cinnamon, and all of these come through in the flavour. The fresh rhubarb and heat of ginger are compliments by the earthy botanicals giving a delicious overall warmth. The palate remains fresh though, with a sweetened citrus finish. V2C Barrel Aged Dutch Dry Gin With their Barrel Aged gin, the latest in their range, V2C have created a gin meant to be savoured. "No rush, no interruptions, no scrolling or swiping. Just truth in a glass that demands your undivided attention". This is a gin which has a juniper-forward flavour profile, amply supported by other botanicals which are angelica, cardamom, coriander, ginger, laurel, liquorice, lemon and orange. After distillation, this is rested on American oak casks for at least six months. This ensures the gin develops some interesting oaky-vanilla notes, and an earthiness. This blend of botanicals, and resting in the barrel gives a flavour of ginger and juniper with a hint of pepper. Cinnamon and a cedar heat from the cask are also joined by a soft caramel sweetness. Heidell Navy Strength Gin Whilst Heidell Gin is a relative newcomer to the gin world, their signature gin has already won a Silver award from the London Spirits Competition. As with its little brother, their Navy Strength is also produced in Naantali, a town located in the Finnish Archipelago - the South West of Finland (west of Helsinki). They utilise as many local ingredients as they can, crystal clear Finnish water, a Dutch still and take inspiration from the Sea - doubly important in a Navy Strength edition. With their Master Distiller being a retired Naval Officer, it should come as no surprise that they would launch a Navy Strength gin. This is the big brother of Heidell Gin, a true handcrafted gin which combines a traditional gin taste - but powered up.... with the aroma and taste of a stormy sea. The aroma is of a classic gin, right from the start with a stronger punch. The notes of juniper and a defined aroma of the sea. On the palate the juniper is pervalent through the drink, giving a delicious dryness. Inspiration was taken from a Cuban song (Lagrimas Negras), which tells the story of a young woman who was so overcome with emotion that she sobbed into a vat of rum, filling it with her sorrows. Black Tears is a rum pack full of emotion, which aims to celebrate the contemporary Cuba. This is a blend of Cuban rum and spices. Its based on a silver dry rum from one of the best Cuban distilleries and is the first dry spiced cuban rum on the market. Setting itself apart from other spiced rums, this has a bittersweet taste and a low sugar content (typical for Cuban rums). The spices used are coffee and cacao, and aji dulce (a sweet pepper, used heavily in local cuisine).  This is a rum which has a cool, golden intensity - which is both bright and clear. Himbrimi Old Tom Gin 50cl

Himbrimi Old Tom Gin Both inspired by, and utilising herbs which are found along the banks of lakes and rivers in Iceland, this is a gin quite unlike anything you will have tried before. Using wild arctic thyme, angelica flowers (not the root!), lemon peel and juniper they blend with a neutral grain alcohol which is sweetened with honey. The aroma of this gin is woody, with a wild nature feel. Think pine bark, sweet dark honey and mosses. The flavour stands out - its proud of itself almost, with a bold flavour with defined spicy notes. The earthy notes detected in the nose come through too. Mid palatte the juniper comes forward with a freshness which is joined with thyme, lavender and a little tarragon. The finish is somewhat bitter from the herbs, with a sweetness which lightens it. It remains on the palate, reminding of the drink. This is definitely a gin which can be drunk slowly and savoured.  Read more about Himbrimi Perfect Serve Whilst this is a sweetened Gin (and therefore defined as an Old Tom), this is distilled with herbs, which blends a degree of bitterness into the end of the drink, similar to an Amaro (Italian sweetened herbal liqueur). Because of this, we really enjoyed drinking this on its own as a digestif. This would also make an interesting addition to a Negroni, bringing a different nuance of herbal flavours. For a longer drink, try with a Ginger Ale (Fentimans works well). 50ml of the gin with 150ml of the tonic is a good ratio, a couple of ice cubes and a garnish of a slice of orange.

Blind Tiger Piper Cubeba Gin Whilst it gives a striking look to the bottle, there is a reason behind the name of Blind Tiger. Another name for a speakeasy, A blind tiger was a hidden bar which served alcohol during the period of prohibition. The door of the place would have the picture of a blind tiger or a blind pig, so those in the know would know where to go! Blind Tiger's Piper Cubeba gin is made in small batches in a "concealed" distillery in the west of Belgium, they macerate and distill the botanicals together before adding double distilled cubeb pepper. Daring and invigorating, this gin has a unique blend of botanicals, which give it a distinct spicy profile from the cubeb pepper, which is joined with hints of citrus from orange. Unusually, they use malted barley in their distillation along with the required juniper. These are joined with corriander seeds, bitter orange peel, orange blossom, ginger, green cardamom, lavender and licorice, angelica and orris root. Finally, a secret Belgian botanical is added. Definitely a spicy gin, with clear citrus notes. The end finish is spicy too, with the piper cubeb (pepper) coming through as well as a warmth from the malted barley and earthy notes from ginger liquorice and cardamom.   Read more about Blind Tiger Perfect Serve Whilst this is really delicious drunk on its own over ice, having it as a gin tonic brings out a slightly different character. The bubbles tone down the spicy notes a little, and the quinine helps draw out the citrus a little more. It works best with a neutral, and dry tonic such as Three Cents Dry Tonic. In a glass filled with ice, add 50ml of the gin to 150ml of the tonic. Garnish with a slice of orange, and some black peppercorns.
